POKOTABI / Sushi Hashimoto
鮨 はしもと
Located in Shintomicho, Sushi Hashimoto is acclaimed for an omakase progression that begins with delicate dashi and seasonal small plates before transitioning to bold nigiri on red-vinegar rice.
01 / ABOUT THE PLACE
A meal at Sushi Hashimoto begins with a cup of warm, restorative dashi before flowing seamlessly into a succession of seasonal small plates. Highlights include artfully rolled sardine norimaki threaded with aromatics, meltingly smooth monkfish liver, and steamed savory egg custards enriched with shirako or shellfish. These labor-intensive dishes create an engaging rhythm of textures and temperatures, best enjoyed alongside a selection of sake, beer, or wine.
The latter half of the omakase turns to nigiri crafted with red-vinegar sushi rice that is prized for its taut bite and assertive acidity. The procession opens with impeccably cured kohada (gizzard shad), moving briskly through smoked Spanish mackerel glistening with natural oils, marinated lean tuna, medium-fatty chutoro, sweet kuruma prawn, sea urchin, and tender simmered conger eel. Each piece is assembled with careful consideration given to the cut of the fish and its serving temperature.
The understated dining room is arranged primarily around a counter with 8 seats, offering omakase menus at both lunch and dinner. Guided by the chef’s calm presence and attentive hospitality, diners can settle in and appreciate the classic discipline of Edomae sushi.
